What does Indian Food and Cooking look like?

Cooking the A-Z of Indian exploring ingredients, ingredients, preparations and concepts that are unique to the Indian food narrative—its cultivation, preparation, consumption, myth and mythology.

I am curious to know what an ingredient means to a people, how do they cook it and how do they feel nourished? While this conversation reveals the tears in our social fabric, cooking through the foods of diverse people is a wonderful way to discover how powerful and unifying food can be. Same ingredients, different flavours.

I have over 20 years of research, field work and ethnographic understanding of culinary practices in India. It came together with an idea.

Using the alphabet as a way to list ingredients, preparations and food concepts unique to India seemed a logical way to capture the information I had amassed. Take a look at what ‘A’ looks like.
